The word “rogan” stands for “red color” and “josh” stands for “heat or passion.”  The combination of the two words suggests the actual flavor of the recipe- that is red and hot. The red color of the dish is gained from the lip-smacking spice- Kashmiri red chili powder while the heat in the recipe is a result of the combination of several hot spices with chili. A celebrated and popular chef from India, Sanjeev Kapoor, suggests that the quality of meat can change the flavor of the dish. He prefers to use the meat with more fat to induce the zest of the recipe and favors to enjoy the dish with steamed rice.

The preparation of this succulent and juicy recipe takes around 20 minutes while the total time required for cooking is 1-2 hours approximately. The ancient chefs, who worked in the kitchen of royals, used to cook the dish with traditional methods and skills, which varied a little from modern procedures.

Bhindi masala recipe is a great way to add more hues and variety to your dining plate. It is one the famous and highly used recipes in India. It takes around 25-30 minutes to prepare. This veg recipe can be a surprising element in your meal. Let’s check how the recipe is made successfully with a lot of ingredients.

First of all, wash and dry the bhindi . You can also wipe them with a wet cloth. Then, cut both the ends and cut into 2-inch long pieces. Slit them horizontally from any side, but don’t divide them into two pieces.

Heat a little quantity of oil in a kadai or frying pan, then add the cumin seeds. When seeds change colour, add the onions and saute and let it turn into light golden. Once the mixture gets a new color, add green chillies and bake it for half a minute.

Now add bhindi to the mixture and sprinkle the red chilli, coriander and turmeric powders in an adequate quantity. Mix it well and cover it. Let it cook over a low heat and stir it, often.

Add the salt and amchur to bhindi. Increase the heat and cook for 2 minutes. You may use tiny onion pieces for this recipe and stuff them with a mixture of turmeric powder, coriander powder, red chilli powder, salt and amchur. You can also add green chillies to make the recipe more spicy.
