You may have often heard of an authentic Indian recipe- Rogan Josh, which is one of the most popular dishes from India. Rogan Josh, a mouthwatering recipe cooked with lamb or mutton, is originally a famous Kashmiri dish that was brought to Kashmir by Mughals and afterward was influenced by Persian cuisine.

The word “rogan” stands for “red color” and “josh” stands for “heat or passion.”  The combination of the two words suggests the actual flavor of the recipe- that is red and hot. The red color of the dish is gained from the lip-smacking spice- Kashmiri red chili powder while the heat in the recipe is a result of the combination of several hot spices with chili. A celebrated and popular chef from India, Sanjeev Kapoor, suggests that the quality of meat can change the flavor of the dish. He prefers to use the meat with more fat to induce the zest of the recipe and favors to enjoy the dish with steamed rice.

The preparation of this succulent and juicy recipe takes around 20 minutes while the total time required for cooking is 1-2 hours approximately. The ancient chefs, who worked in the kitchen of royals, used to cook the dish with traditional methods and skills, which varied a little from modern procedures.
